Pumpkin season is officially here! These cookies, courtesy of Crazy for Crust, are a great way to enjoy the cooler (or blazing hot weather if you’re here in Tennessee).

Ingredients:

  • 3/4 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tbsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 2 cups all purpose flour
  • 2 tsp pumpkin pie spice (for topping)
  • 1/3 cup granulated sugar (for topping)
  1. Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.
  2. Cream butter and 3/4 cup sugar. Once the mixture is creamed and fluffy, mix in the egg and vanilla extract until smooth, cream of tartar, pumpkin pie spice, and salt. Slowly mix in flour until the mixture is just combined.
  3. Place remaining 1/3 cup sugar and pumpkin pie spice in a small bowl and stir.
  4. Scoop 2 tbsp sized balls of cookie dough and roll them in the spice/sugar mix, then place them 2 inches apart on the prepared cookie sheets.
  5. Bake for 9-11 minutes. or until the bottoms just start to turn golden brown. Cool at least 5 minutes on cookie sheet before removing.
